There are 54 different ethnic groups in Vietnam each with their own style and flavor.<br \/><strong>Northern Cuisine<\/strong><br \/>North Vietnam offers a richer cuisine in the sense of nourishment when compared to the South. Northern Vietnam typically fries in vegetable oil or animal fat, black soy sauce, fermented soybean paste, pasta and natural wheat noodles or white or yellow eggs. The North has a preference for beef although have considered the cow to be a work mate for thousands of years. \u00a0Poultry is common in most areas and especially duck when lacquered.<br \/><em>Some typical Northern dishes:<\/em><br \/>Ph\u1edf: Vietnamese national soup which is typically eaten at breakfast throughout the country although available throughout the day.<br \/>Ch\u1ea3 c\u00e1: Turmeric fried fish on a bed of drill which is served with shrimp fritters, pulp fermented\u00a0shrimp, and peanuts.<br \/>B\u00fan ch\u1ea3: Grilled pork belly and pork dumplings with rice\u00a0noodles, aromatic\u00a0herbs, and pickled\u00a0vegetables. Very popular for lunch!<br \/>B\u00fan thang: Vermicelli rice noodles served with an omelet\u00a0and chicken.<br \/>B\u00e1nh ch\u01b0ng: Rice cake served with bean paste and steamed bacon.<br \/>Nem: Fried rice cake roll stuffed with minced pork and shrimp and crab.<br \/>C\u00e1\u00a0Kho: Grilled fish and baked caramel with bits of bacon and\u00a0chili. There are variations of this dish with pork or pork belly, with chicken, beef.<br \/><strong>Central cuisine<\/strong><br \/><strong>Known as the ancient capital of Vietnam and a UNESCO World Heritage Center, there are many delicious dishes in Hue.<\/strong>\u00a0Going back in history, when compared to the imperial court and its extravagant refinements; the majority of\u00a0the population lived on\u00a0top of soil with little cultivation. Thus, this contributed to the development of a very mixed cuisine.<br \/>The cuisine of Hue is more refined, spicy and peppery than other regions. But it shares the taste of fish and seafood with a moderate use of herbs.<br \/><em>Some typical Central dishes:<\/em><br \/>C\u01a1m H\u1ebfn \u2013 Hue: This dish is made with mussels and rice. It\u2019s a complicated recipe that includes sweet flavors, salty, sour, bitter and pungent.<br \/>B\u00e1nh B\u00e8o \u2013 Hue: This is cooked rice paddle steam with its core stuffed with shrimp and mashed beans, served with\u00a0a sweet and sour sauce, fish and green chili.<br \/>Cao L\u1ea7u \u2013 A specialty of Hoian, made of noodles,\u00a0pork, and local vegetables.<br \/><strong>Southern cuisine<\/strong><br \/>The South of Vietnam plays on the flavors and colors of multiple tropical harvests. The variety of vegetables, fruits,\u00a0herbs, and spices make any meal a celebration.
